Remember, YOU'RE the chef! Swap out black or red beans for your personal favorite. Don’t like red onions, take them out and throw in some corn. Omit the garlic and add some cayenne pepper for some spice! Make it your own.
How to:
Pour the crushed tomatoes and tomato paste into a medium crockpot. Stir until smooth and combined.
Stir in beans, diced bell peppers, and diced red onion.
Stir in cubed sweet potatoes.
Add in salt, pepper, cumin, and garlic.
Stir well.
Place crockpot on high for 2 hours and 45 minutes. Remember each appliance varies. Feel free to check it at 2 and a half hours in or leave it for three!
Environmental sustainability is at the forefront of my mind lately. When creating this recipe, I wanted to make something nourishing and satisfying on its own, independent of animal protein.
The recipe is still versatile enough to welcome the addition of cooked ground beef or shredded chicken once it’s already plated.
I’m pushing myself out of my traditional cooking comfort zone. Like I said, cooking is playful, right? It’s easy for me to forget that meat doesn’t need to be the center of the dish. If you’re like me, you grew up with this in mind. I’m motivated to explore new flavors and recipes that highlight the nourishing and flavorful components of plant centered meals.
